I got this huge sweets craving tonight and pulled out my new WW cookbook and found a great recipe for cookies I made- and I have to share!
Favorite Oatmeal-Raisin Cookies by WW Comfort Classics Cookbook
1 1/2 C. quick cooking oats
3/4 C. whole wheat flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 C. sugar
1/4 C. brown sugar
4 Tablespoons unsalted butter, softened
1 Tablesppoon canola oil
1 large egg
1 teaspoon vanilla extract
1/2 C. raisins, choc. chips, or nuts
Preheat oven to 350 degrees.
Mix oats, flour, cinnamon, baking soda, and salt.
W/electric mixer beat sugars, butter and oil. Beat in egg and vanilla. Add the flour mixture and beat until blended. Stir in raisins or choc. chips. Drop dough by tablespoons and press each mound down a bit. Bake for 12 minutes and enjoy!
